friday night is date night.

so...for quite some time now, friday night has been date night. sure, we have things going on here & there or we make exceptions here or there...BUT, it's so fun to have something special that you & your spouse get to look forward to every week!

SIDE NOTE, one thing my mom & dad did was 'date night'. they told me that their doctor always said to do that even when you have kids. MAKE TIME FOR YOU TWO. make time for your relationship. make time for nourishing your love. they did a great job of it & were awesome role models. my brother & sister, whom have 3 kids also do a slam-bam job of this. and adam & i are starting these habits now. so, my suggestion: make time for a date night...

as husband always sarcastically says in a weird voice (its' from some movie), "how can you ever have time if you never make time?"

ANYWAYS, i digress. what we are currently doing for our date night is as follows:
we decided that we have SO many movies that we don't watch. so, every friday one of us picks a movie that we want to watch (i can't pick one that i know adam will want to watch & he can't pick one i want to watch -- we do this all the time, so we had to set ground rules :) ). the other one of us picks the meal we're going to cook! that's it! the end! el fin! it's pretty fun to pick out a new meal & make it, too! 

last friday night was: The Odd Life of Timothy Green (picked by me...mostly because it showed up in our mail. this is what happens when you're part of Disney Movie Club & you forget to respond to your Featured Title...$24-$40+ later...ugh). anyways, adam picked SHAKE & BAKE pork chops (recipe we used)! i also just boiled a can of corn & sliced up maybe five (or six or seven -- i don't know) potatoes & poured a package of dried onion soup mix in...WALAH! there you have it.



it was pretty yummy, actually. we used the extra crispy shake & bake -- kinda spicy, actually. not hot or anything, but adam has a crazy tummy, so we try to stay away from spicy stuff that might irritate it! next time, i'll probably buy boneless pork chops, but maybe not because these pork chops were good! boneless ones sometimes have a little more chew, i don't know? anyways, it was good... i recommend trying it! both date night & this meal!

CHALLENGE: May 6-15

yeah, okay... so blast from the past...i'm sure you remember these PAST CHALLENGES that i haven't posted in like forever. well...i found this in my drafts & figured since it was done, i'd share... i'm happy to report that most days i hover between 160-164 lbs! that is with me taking like a month off, whoops! anyways, going pretty well & healthy definitely feels better. i mean, i still indulge in my sweet tooth some, but holding myself accountable (usually) feels good! i can tell that when i eat a bunch more or let myself eat a bunch of junk, my body definitely feels more like a lump & i just don't feel as good...tummy or otherwise! so keep going! you can do it! :) i'll try to get better at keeping you all updated! loves!

start of new challenge!!! no bread, small sweet treat, 6x/week for 20 minutes; smile at everyone & 2 compliments...ready ps 119 twice

honestly, i don't remember much of what i ate. today i went to the farmer's market...had like 8 little samples of cheeses, sampled granola, sampled wine, sampled pretzels & jams/jellies, sampled chips & salsa... NO BREAD SAMPLES THOUGH! :) tasted a vegan taco & also a fruit smoothie. YUM.

then, what did i eat when i got home...?! HMMM... i can't remember?! maybe cereal? i don't know, but we went grilling & my brother & sister's for mother's day! i ate a hotdog (no bun), a kabob, a stuffed mushroom, chips, fruit, pasta salad, dirtcup desert & lots of other stuff, lol... it was fun! ice tea mango

walked all around the farmer's market!

i am stuffed. we grilled at my brother in laws for mother's day & ate lots! yum. i had a few sips of mt dew & had a lime straw-ber-ita thing, otherwise water! YUM. my tummy is full! my sister in law bought bread for me because she know i lovE it, but i couldn't eat it! i felt bad, but it was definitely a sweet thought! :)

no workout...day off. i did the 6 day challenge...
i read psalms 119 twice. i told lots of compliments & gave lots of smiles...but i'm not sure it i did exactly 2 compliments per day & smiled at EVERYONE like the challenge was from mama. :) i tried though!

EAT. heath bits peanut butter cookies

remember when i was telling you about my eating bags of chocolate/peanut butter chips HERE, well...same scenario! :) again, they were -ish, but everyone at work liked 'em! swishcity!





1/2 C shortening
3/4 cup Reese's creamy peanut butter
1-1/4 C packed light brown sugar
3 TB milk
1 TB vanilla extract
1 egg
1-1/2 C all-purpose flous
3/4 tsp baking soda
3/4 tsp salt
1-13 C (8 oz pkg) heath milk chocolate toffee bits, divided

1. heat oven to 375
2. beat shortening, peanut butter, brown sugar, milk & vanilla in large bowl until well blended. add egg; beat just until blended. combine flour, baking soda & salt; gradually beat into peanut butter mixture. stir in 1 cup toffee bits; reserve remainder for topping.
3. Drop by heaping teaspoons about 2 inches apart onto ungreased cookie sheet; top each with reserved toffee bits. Bake 7 to 8 minutes or until set. Do not over bake. Cool 2 minutes. Remove to wire rack. Cool completely. About 3 dozen cookies.

bring some of these semi-delicious (HA!) little cookies to your work break room, church or anywhere else you can think of & a peanut butter lover is sure to enjoy!

EAT. reeses chewy chocolate cookies.

as i was sitting eating my peanut butter chips, i decided instead of eating the whole bag, maybe i should actually make something from them... 
thus, i made some cookies the other day...they were ish... i think that for now, i'm diggin' on some regular chocolate chip! :)



2 cups all purpose flour
3/4 cup hersheys cocoa
1 teaspoon baking soda
1/2 tsp salt
1-1/4 cups (2-1/2 sticks) butter or margarine, softened
2 cups sugar
2 eggs
2 teaspoons vanilla extract
1-2/3 (10 oz pkg) reeses' peanut butter chips

1. heat oven to 350
2. stir together flour, cocoa, baking soda & salt. beat butter & sugar in large bowl with mixer until fluffy. add eggs * vanilla; beat well. gradually add flour misture, beating well. stir in peanut butter chips.
3. drop by rounded teaspoons onto ungreased cookie sheet. bake 8 to 9 minutes. (do not overbake; cookies will be soft. they will puff while baking & flatten while cooling.) cool slightly; remove from cookie sheet to wire rack. cool completely. about 4-1/2 dozen cookies.

pan recipe: preat batter in greased 15-1/2 x 10-1/2 x 1 inch jelly roll pan. bake at 350. 20 minutes or until set. cool completely in pan on wire rack; cut into bars. about 4 dozen bars.

i will say that these were a big hit at work...i think pretty much anything will get eaten eventually, if you just set it on your break table! :)

we're getting ready to go to adam's church softball PLAYOFFS & just wanted to say hi before we left. it's been a while, hasn't it? i know, i know...

i feel like my shirts sort of look like part of the rainbow -- so bright & happy! eek. my orange shirt really isn't as bright as the computer is making it look, but whatever!
