as i was sitting eating my peanut butter chips, i decided instead of eating the whole bag, maybe i should actually make something from them...
thus, i made some cookies the other day...they were ish... i think that for now, i'm diggin' on some regular chocolate chip! :)
2 cups all purpose flour
3/4 cup hersheys cocoa
1 teaspoon baking soda
1/2 tsp salt
1-1/4 cups (2-1/2 sticks) butter or margarine, softened
2 cups sugar
2 eggs
2 teaspoons vanilla extract
1-2/3 (10 oz pkg) reeses' peanut butter chips
1. heat oven to 350
2. stir together flour, cocoa, baking soda & salt. beat butter & sugar in large bowl with mixer until fluffy. add eggs * vanilla; beat well. gradually add flour misture, beating well. stir in peanut butter chips.
3. drop by rounded teaspoons onto ungreased cookie sheet. bake 8 to 9 minutes. (do not overbake; cookies will be soft. they will puff while baking & flatten while cooling.) cool slightly; remove from cookie sheet to wire rack. cool completely. about 4-1/2 dozen cookies.
pan recipe: preat batter in greased 15-1/2 x 10-1/2 x 1 inch jelly roll pan. bake at 350. 20 minutes or until set. cool completely in pan on wire rack; cut into bars. about 4 dozen bars.
i will say that these were a big hit at work...i think pretty much anything will get eaten eventually, if you just set it on your break table! :)
